Ingredients:

  • ¾ cup fresh orange juice
  • 1 teaspoon orange zest
  • 2 tablespoons canola oil
  • 1 large egg
  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 1 ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup dried cranberries

Orange Glaze Ingredients:

  • 1 cup sifted powdered sugar
  • 1-2 tablespoons orange juice
  • ½ teaspoon vanilla extract

Recipe Instructions

⮚ Preheat the oven to 350 degrees. Lightly coat a 9×5-inch loaf pan with cooking spray or butter.

⮚ In a small bowl, whisk together orange juice and zest, canola oil (could substitute with sunflower oil), and slightly beaten egg until well mixed.

⮚ In a large bowl, combine the all-purpose flour, sugar, baking powder, and salt.

⮚ Make a hole in the center of the dry ingredients and pour in the wet ingredients. Story with a wooden spoon until the dry ingredients are incorporated – don’t over mix.

⮚ On the side, powder dried cranberries with a tablespoon of flour, then gently fold into the batter.

⮚ Pour batter into the prepared loaf pan and bake for 55 minutes. Cool in the pan on a wire rack for 10 minutes.

Orange Glaze Instructions:

⮚ Preheat the oven to 350 degrees. Spray a 13×9 inch baking pan with non-stick cooking spray.

⮚ Mix the butter in a cake beater.

⮚ Add sour cream, vanilla, and eggs. Mix well.

  • 1 cup old-fashioned rolled oats

  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 ½ sticks unsalted butter
  • 1 cup light brown sugar
  • ½ cup granulated white sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 tablespoon vanilla extract
  • 1 ½ cups semi-sweet or white chocolate chips
  • 1 ½ cups dried cranberries

⮚ Preheat the oven to 325 degrees. Line 2 baking sheets with parchment paper.

⮚ In a medium bowl, mix the flour with the oats, baking powder, baking soda, and salt.

⮚ In a standing mixer, beat the butter and both sugars at medium speed until creamy.
