Purple sweet potatoes obviously receive their name from their bright purple color. The antioxidant responsible for the color is called anthocyanin, which also gives color to purple cabbage, purple cauliflower, and even red wine. This gives the purple sweet potato a slightly wine-like flavor. The potatoes are only mildly sweet, much less than a regular sweet potato, and drier and starchier than a sweet potato, making them more similar to a regular potato. Prep purple sweet potatoes much like any other potato. Scrub the potatoes gently under running water. Be sure to remove any eyes or stems growing from the potatoes. Use a fork to gently poke holes into the purple sweet potatoes, which allows steam to release while it is baking.
How to bake purple sweet potatoes
Because purple sweet potatoes are more starchy and drier than other types of sweet potatoes, they will require a bit longer cooking time. Place the scrubbed purple sweet potatoes with the holes poked onto a sheet pan, and bake in an oven at 350 degrees F. for approximately 1 ½ hours and up to 2 hours, until a fork easily pokes into the potatoes.
How to cook purple sweet potatoes in an Instant Pot
Baking purple sweet potatoes in an Instant Pot can cut down on the baking time. Prep the potatoes as usual, and pour about ½ inch of water into the bottom of the Instant Pot. Use the wire rack to keep the potatoes out of the water, and place them in the Instant Pot. Set the manual timer setting for 10 to 15 minutes, more time if you will be cooking multiple potatoes. Seal the Instant Pot and cook, and allow the steam to naturally release at the end of the cooking time for at least 10 minutes. Test the doneness of the purple sweet potatoes with a fork.
How to store purple sweet potatoes
Purple sweet potatoes should be stored like any other potatoes, in a cool and dry place. However, purple sweet potatoes have a shorter shelf life than other potatoes, approximately one to two weeks. The storage location should be warmer than the fridge, and slightly cooler than room temperature.
