How To Make Rolled Ice Cream With Just Two Ingredients

rolled ice cream

Whether you know this delicious and cool-looking dessert as marble top ice cream, stir-fried ice cream, or the Thai rolled ice cream, its signature flavor and looks are always the same. This chewy, sweet milky ice cream with rolled tubes presented in a cup with a lot of garnishes and whipped cream is fun to eat.

Rolled ice cream is made on specifically designed super-chilled marble slabs or flat tops for rapid chilling. The person making the rolled ice cream uses the chilled slab to chop and roll different ingredients until they form a cream. Then they add different flavorings and flatten the cream to make the rolls before serving them in small cups.

The process of making rolled ice cream is incredibly simple and easy. In this article, we’ll discuss how to make rolled ice cream at home with only two ingredients. You won’t need any special equipment like fancy marble slabs or flat tops to complete the process. So let’s get started.

Most vendors, whether they are fancy storefronts or street carts, who sell rolled ice cream keep their recipe secret, especially the cream base. However, the texture of the rolled ice cream tells pretty much everything about its two ingredients: heavy cream and sweetened condensed milk.

Rolled Ice Cream Recipe

Ingredients

  • 1 pint of heavy cream
  • 14 ounces of sweetened condensed milk

Optional Ingredients

  • Mix-ins: cookie dough, caramel, sprinkles, strawberry jam, cocoa powder, Oreos, chopped nuts
  • Pinch of salt
  • Toppings: pretzels, chocolate chips, cake chunks, sprinkles, fresh fruit, mochi, gummy bears

Instructions

Step 1: Mix the Ingredients

Whisk sweetened condensed milk and heavy cream together in a bowl. You can also add a pinch of salt if you would like.

Step 2: Create the Ice Cream Base

Pour the mixture onto the rimmed baking sheet or a simple metal sheet pan and create the ice cream base. Don’t forget to keep the thickness around 1/8 of an inch and use a spatula to distribute the mixture evenly.

Note: You can also add optional mix-ins if you like.

Step 3: Let the Ice Cream Base Freeze

Now you’ll need to place the baking sheet in your freezer until it’s frozen completely. It usually takes about 3 to 4 hours depending upon your freezer’s power.

Step 4: Create the Ice Cream Rolls

Remove the container from your freezer and position it with the long side towards you, once your ice cream base has frozen properly. Use your spatula to cut the frozen base into multiple sheets. Ideally, the width of each sheet should be about 2.5 to 3 inches wide.

Now scrape up the first sheet using your spatula, roll it gently, then transfer it to your serving cup. Repeat the same process for the remaining sheets. You’ll need to work very quickly after taking the frozen base out from your freezer because it will melt quickly. Then just add some whipped cream and other toppings as desired and enjoy!
