  • Always choose beets that are hard and not soft or squishy.
  • Wash the beets thoroughly with water and cut off the beet greens.
  • Thinly slice the golden beets and dry them with a kitchen towel or tissues.
  • Toss the slices with a bit of olive oil and seasoning.

  1. Preheat the oven to 400 degrees.
  2. Place the seasoned beet slices on a baking sheet.
  3. Roast the golden beets for 50-60 minutes. Check every 20 minutes or so.
  4. Once done, let the beets cool a bit.
  5. Place the beets on a platter with arugula, feta, and pistachios, drizzle some olive oil, pepper, and seasoning on top, serve and enjoy.

  2. You will need an 8×8 glass dish with a lid. Avoid using a container that is too big.
  3. Do not overcrowd the beets in the dish.
  4. Wash the beets and scrub them with a kitchen scrubber to remove any excess dirt.
  5. Trim the beets but do not peel them.
  6. Place the beets in the dish and pour about ¼ cup of water into it.
  7. Cover and microwave the beets on full power for 10-12 minutes on each side.
  8. After 10 minutes, turn the beets around and microwave for another 10-12 minutes.
  9. Once done, take the beets out and let them cool down for a while.
  10. Place the beets on a platter with arugula, feta, and pistachios, drizzle some olive oil, pepper, and seasoning on top, serve and enjoy.
