Preheat the oven to 375 degrees Fahrenheit.
Place spinach in a nonstick pan over medium heat and chop. Stir until the spinach has wilted.
Stir in the cream cheese until it is melted and creamy. Allow to cool completely. If you don’t want to add anything inside the chicken, you can just add a little lemon.
Butterfly the chicken breast (so it opens like a book) and pound it to a thickness of 12 inches.
Top each breast with one slice of swiss cheese and the spinach mixture. Wrap chicken tightly around the spinach and cheese. Wrap 2 pieces of bacon around each breast and fasten with toothpicks. If desired, season with cajun or chicken seasoning.
Bake for 35-40 minutes on a baking sheet.
