Add crab meat, eggs, mayonnaise, Dijon mustard, soy sauce, pepper, salt, and panko in a medium bowl, and mix well.
Pour ¼ cup of oil into a skillet over medium-high heat. When the oil is hot, add a scoop of meat mixture into the oil and press down using the back of a spatula until patty shape.
Cook each side for 3 to 4 minutes until crispy and golden brown.
When crab cake patties are ready, transfer them to a plate lined with absorbent paper.
Drizzle with lemon juice and serve with parsley garnishing.
