Heat a non-stick pan over medium heat.
Spread a thin layer of ancho aioli on one side of each slice of bread.
Place 3 slices of cheese on two of the bread slices.
Sprinkle the diced pickled jalapenos on top of the cheese slices.
Place the other two bread slices on top of the cheese and jalapeno slices, aioli side down.
Place the sandwiches in the pan until the bread is toasted and the cheese is melted, flipping once to cook both sides evenly.
Once the sandwiches are cooked, remove them from the pan and let them cool for a few minutes.
Cut the sandwiches into halves or quarters and serve hot.
