Add oil to a large skillet over high heat. Pat dry pork chops using a paper towel, then season all sides with pepper, garlic, and salt.
When the oil is hot, add the seasoned pork chops to the skillet and sear each side for 2 to 3 minutes or until brown.
Meanwhile, prepare the oven and preheat it to 350 degrees F.
Once pork chops are brown, remove them from heat, pour mushroom soup on top, and tightly cover them with aluminum foil.
Place the chops in the oven and bake for 40 to 45 minutes or until the chops are tender and thoroughly cooked.
Once chops are ready, remove from oven, allow to rest for some time, then remove foil and serve.
