Rinse pork chops under fresh water, pat dry using a paper towel, transfer to a dish and season both sides with pepper and salt.
Add brown sugar, onion powder, garlic powder, olive oil and paprika in a small bowl, and mix well.
Drizzle the oil mixture all over the chops and gently rub; transfer to a dish.
Pour ½" of oil into a skillet over medium heat. When the oil is hot, add coated pork chops, do not overcrowd them.
Cook for 7 minutes, flip side and cook for another 5 minutes or until internal temperature reaches 165F.
When ready, remove from heat, place on a plate lined with absorbent paper and leave to rest for 10 minutes, then slice and serve.
