How to Cook Collard Greens Without Meat

Preparation time: 15 minutes; Cooking time:  65 minutes; Total time: 80 minutes; Servings: 4

Ingredients
  

  • 1 tbsp. olive oil
  • 1 lb. collard greens large veins removed
  • ½ cup white onions diced
  • 2 tsp. garlic minced
  • 2 cups vegetable broth
  • ½ tsp. red pepper flakes
  • ½ tsp. black pepper
  • 1 ½ tsp. salt
  • ½ tsp. liquid smoke

Instructions
 

  • Drizzle olive oil in a large pot over medium-low heat, add onions, garlic, and sauté until fragrant.
  • Then add collard greens and pour vegetable broth; bring the mixture to a simmer.
  • Add salt, red pepper flakes, black pepper and liquid smoke cover the large pot with a lid, and reduce heat to bring the mixture to a low simmer. Cook for 60 minutes.
  • When ready, remove from heat and serve immediately.
