Elotes Made with Canned Corn
Preparation time: 5 minutes; Cooking time: 5 minutes; Total time: 10 minutes; Servings: 4
- 3 ¾ cups canned whole kernel corn drained
- ¼ cup mayonnaise
- ¼ cup cojita cheese grated
- 2 tbsp. lime juice
- 1 tsp. paprika
- ½ tsp. cayenne pepper
- ¼ tsp. cumin ground
- ¼ cup butter
- 1 jalapeno finely chopped
- Cilantro for garnishing
Add butter to a skillet placed over medium heat. When butter melts, add corn kernels and cook for five minutes while stirring frequently.
After five minutes, remove the corm from the heat and transfer it to the serving bowls.
Then add 1 tbsp. of mayonnaise, chopped jalapeno and 1 tbsp. of cotija cheese to the serving bowls, season with paprika, cayenne pepper and cumin.
Squeeze lime juice, garnish with cilantro and serve immediately.
