Elotes Made with Canned Corn

Preparation time: 5 minutes; Cooking time:  5 minutes; Total time: 10 minutes; Servings: 4

Ingredients
  

  • 3 ¾ cups canned whole kernel corn drained
  • ¼ cup mayonnaise
  • ¼ cup cojita cheese grated
  • 2 tbsp. lime juice
  • 1 tsp. paprika
  • ½ tsp. cayenne pepper
  • ¼ tsp. cumin ground
  • ¼ cup butter
  • 1 jalapeno finely chopped
  • Cilantro for garnishing

Instructions
 

  • Add butter to a skillet placed over medium heat. When butter melts, add corn kernels and cook for five minutes while stirring frequently.
  • After five minutes, remove the corm from the heat and transfer it to the serving bowls.
  • Then add 1 tbsp. of mayonnaise, chopped jalapeno and 1 tbsp. of cotija cheese to the serving bowls, season with paprika, cayenne pepper and cumin.
  • Squeeze lime juice, garnish with cilantro and serve immediately.
