Method
- Add butter to a skillet placed over medium heat. When butter melts, add corn kernels and cook for five minutes while stirring frequently.
- After five minutes, remove the corm from the heat and transfer it to the serving bowls.
- Then add 1 tbsp. of mayonnaise, chopped jalapeno and 1 tbsp. of cotija cheese to the serving bowls, season with paprika, cayenne pepper and cumin.
- Squeeze lime juice, garnish with cilantro and serve immediately.
