Pour water into a Dutch oven over medium heat. Add black beans and salt, and bring to a boil.
Then reduce heat to low and allow the mixture to simmer.
Cover the Dutch oven and leave to simmer for 1 ½ hours.
Stir the beans occasionally and as they start to become visible above the liquid, add a cup of water. Repeat this step as needed.
Check the taste and consistency of the beans throughout the cooking process. They should have a creamy texture on the inside and a firm exterior. If the bean liquid is too watery, let it simmer for a few more minutes with the lid off.
When beans are ready, remove them from the heat and transfer them to the serving bowls.
