Method
- Transfer the noodles to the colander, rinse under cold water, drain and set aside.
- In a frying pan over medium heat, pour 1 tbsp of oil. Once the oil is hot, add garlic and sauté for 3 minutes while stirring continuously.
- Then add the drained noodles to the pan, and stir to cook for 3 minutes or until completely warm.
- Once done, remove the pan from the heat, and add the remaining olive oil and the diced tomatoes. Toss gently to make an even coating. Finally, add the spices and serve.
