Fill a large pot with water and place it over medium heat. Once the water starts to boil, add a tbsp of vinegar. Add spinach leaves and boil them for no more than 40 seconds.
Drain the leaves and run cold water over them. Set them aside.
In a pot, heat oil and add chopped onion.
Cook the onion for 2 to 3 minutes until they are translucent.
Now add minced garlic and cook for a few minutes until fragrance.
Add chopped tomatoes and season with turmeric, coriander powder, salt, and red chili powder.
You can add a splash of water to ensure that the tomatoes cook evenly.
Add diced potatoes and cook for 4 to 5 minutes. Add spinach and cook for 5 minutes or until all the water evaporates.
Add green chillis and cook for a minute or two. Serve and enjoy!
