How to Cook Spinach with Potatoes

Preparation time: 5 minutes; Cooking Time: 15 minutes; Total Time: 20 minutes; Servings: 4

Ingredients
  

  • 1 ½ lb. fresh spinach washed & stems removed
  • 2 medium Russet potatoes peeled and cubed
  • ¼ cup neutral oil such as grapeseed or avocado
  • 1 small onion finely chopped
  • 1-2 green chili peppers chopped
  • 1 tbsp. minced garlic crushed
  • 2 medium tomatoes finely chopped
  • 1 tsp. coriander powder
  • ¼ tsp. turmeric powder
  • ¼ tsp. red chili powder
  • Salt to taste
  • Water as required

Method
 

  1. Fill a large pot with water and place it over medium heat. Once the water starts to boil, add a tbsp of vinegar. Add spinach leaves and boil them for no more than 40 seconds.
  2. Drain the leaves and run cold water over them. Set them aside.
  3. In a pot, heat oil and add chopped onion.
  4. Cook the onion for 2 to 3 minutes until they are translucent.
  5. Now add minced garlic and cook for a few minutes until fragrance.
  6. Add chopped tomatoes and season with turmeric, coriander powder, salt, and red chili powder.
  7. You can add a splash of water to ensure that the tomatoes cook evenly.
  8. Add diced potatoes and cook for 4 to 5 minutes. Add spinach and cook for 5 minutes or until all the water evaporates.
  9. Add green chillis and cook for a minute or two. Serve and enjoy!
