How to Cook Delicata Squash on Stove

Preparation time: 5 minutes; Cooking time: 35 minutes; Total time: 40 minutes; Servings: 4

Ingredients
  

  • 1 medium delicata squash
  • 2 tsp olive oil
  • ¼ tsp black pepper
  • ½ tsp salt
  • 1 tbsp parmesan cheese freshly grated

Method
 

  1. Prepare the squash by washing it with cold water to get rid of dirt. Pat the squash dry using a kitchen towel.
  2. With the help of a sharp knife, trim the two edges to create a flat surface. Now cut the squash lengthwise in half. Using a spoon, scoop the seeds. You can either discard them or save them for roasting later.
  3. Place the half squash on a cutting board (cut side down). Using a sharp knife, slice the squash lengthwise into half-inch slices. The slices will look like half-moons.
  4. Place a skillet over medium heat. Once it heats up, carefully place the delicate squash slices on the skillet.
  5. Place the slices on a baking tray. Drizzle olive oil on top and brush it to cover the slices completely. Season generously with salt and black pepper.
  6. Let them cook for 5 to 7 minutes or until they get a beautiful golden brown color.
  7. Flip the slices to cook on the other side as well.
  8. Once done, take the squash slices out of the skillet and transfer them to a serving plate. Sprinkle freshly grated parmesan cheese on top and Serve!
