What To Do with Leftover Boiled Potatoes

If you’re reading this, you likely made some delicious boiled potatoes for last night’s dinner (…or a few nights ago), but now you are stuck with leftover potatoes. As much as you’d like to eat them as they are, leftover boiled potatoes will never be as good as they are when they’re fresh. So what is a nonwasteful and resourceful cook such as yourself to do?

Potatoes are one of my all-time favorite foods because they are so versatile. You can turn them into French fries, mashed potatoes, or even potato croquettes if you want to get fancy! It’s an amazing root vegetable that takes on many forms. If you’re looking for some fresh ideas to make some leftover potato magic in your kitchen, try out one of these fantastic recipes!

 

Mashed Potatoes

Starting with the easiest and most obvious option, mashed potatoes are the perfect way to put your leftover boiled potatoes to good use. Just reheat them in the microwave or over the stove covered with a bit of water to re-steam them and make mashing easier.

Potato Soup

Soup has always been a good go-to for repurposing leftovers, and potatoes are one of them! Since your potatoes are already boiled, you can skip the cooking step and (attempt) to dice them up cooked. Then, toss them into the soup at the end with the cheese, yogurt, and bacon bits until warmed through.

 

Potato Pancakes

Turn your boiled potatoes into the famous Eastern European style dish: potato pancakes! All you have to do is grate the potatoes and add them to your favorite pancake batter recipe. Feel free to add cheese, bacon bits, or anything else that sounds good to you. They’ll come out deliciously crispy and flavorful.

 

 

Potato Salad

Potato salad is another easy option that doesn’t even involve any cooking! Cube up your leftover potatoes and toss them with mayonnaise, mustard, chopped celery, onion, salt, and pepper. Feel free to add more ingredients if you wish, like bacon bits or leftover chicken! The results are heavenly.

Transform your leftover boiled potatoes into a complete meal and make a shepherd’s pie! Grab some ground beef or lamb, frozen veggies, gravy, and cheese.

This recipe is super easy, especially with precooked potatoes. Make your meat mixture, mash the potatoes, and assemble your casserole. Viola! A delicious Irish classic.

Our last and final suggestion is one that many wouldn’t think of right off the bat, but that is precisely why this potato quiche is so special!

A decadent custard made from eggs, heavy cream, and cheese and stuffed with bacon, potatoes, cheese, and onions, you’ll have a breakfast that gives you a mouthful of flavor and texture with every bite. Delish!
