Instructions

  1. Prepare the squash by washing it with cold water to get rid of dirt. Pat the squash dry using a kitchen towel.
  2. With the help of a sharp knife, trim the two edges to create a flat surface. Now cut the squash lengthwise in half. Using a spoon, scoop the seeds. You can either discard them or save them for roasting later.
  3. Place the half squash on a cutting board (cut side down). Using a sharp knife, slice the squash lengthwise into half-inch slices. The slices will look like half-moons.
  4. Place a skillet over medium heat. Once it heats up, carefully place the delicate squash slices on the skillet.
  5. Place the slices on a baking tray. Drizzle olive oil on top and brush it to cover the slices completely. Season generously with salt and black pepper.
  6. Let them cook for 5 to 7 minutes or until they get a beautiful golden brown color.
