For the Wings

  • 4 lb. turkey wings split into flats and drums
  • 3 tbsp. olive oil
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 1 tsp. Italian seasoning
  • 1 tbsp. smoked paprika
  • ½ tsp. cayenne pepper
  • 1 tsp. black pepper
  • 2 tsp. salt

 

For the Gravy

  • ¼ cup all-purpose flour
  • Pan drippings from wings
  • 2 cups chicken stock
  • 4 tbsp. unsalted butter
  • 2 garlic cloves, minced
  • ⅛ tsp. Italian seasoning
  • ¼ tsp. Red chili flakes

 

Instructions

  1. Prepare the oven and preheat it to 375 degrees F. Transfer the turkey wings to a roasting pan and drizzle some olive oil.
  2. Mix minced garlic, Italian seasoning, cayenne pepper, smoked paprika, black pepper, and salt in a small bowl.
  3. Pour the spice mixture over the turkey wings and toss gently to make an even coating.
  4. Spread onions on coated wings and cover with aluminum foil. Place in the oven and bake for 60 minutes.
  5. After 60 minutes, take the wings out of the oven and transfer the drippings to a measuring cup. Set aside.

To make the gravy:
