- 2 lbs. pork tenderloin, boneless
- 1 cup portobello mushroom, sliced
- 1 cup baby carrots
- 1 cup potatoes, diced
- ¼ cup beef stock
For the marinade:
- ½ cup soy sauce
- 2 tbsp white vinegar
- ½ cup maple syrup
- 2 tbsp garlic cloves, minced
- 1 tbsp Italian seasoning
- 1 tsp black pepper
Preparation
- Add soy sauce, vinegar, maple syrup, minced garlic, Italian seasoning, and black pepper in a zip-lock plastic bag.
- Place the raw pork tenderloin in the zip lock bag and seal it.
- Massage the meat with your fingers so that the marinade covers the meat completely.
